3 easy, nutritious meals from VG Meats

Remember, these are just guidelines to inspire you — you can use whatever protein and vegetables you like, change up the seasoning, swap rice for pasta or whatever else works. Chicken and root vegetable salad
Here’s an easy formula for a great dinner. Roast or grill some boneless, skinless chicken breasts with your favourite seasoning (we sell some great ones in store). Roast your favourite root vegetables in the oven or on the BBQ (just cut them into cubes, drizzle some olive oil on them and roast at 375 for about 40 minutes, or until al dente). We like using sweet potato, parsnips, butternut squash, beets and other flavourful winter veggies. Grab some crunchy lettuce like romaine and top it with your sliced chicken and root vegetables. Add a drizzle of balsamic vinaigrette or another favourite dressing and serve. It’s a delicious, vitamin-rich dinner everyone will love!
Steak and pepper pasta
Love pasta? Great — we do, too. Start this meal by grilling or oven roasting a steak to your preferred doneness (rare, medium, well). You can season the steak to your own liking, but we recommend VG’s Mediterranean spice blend for this recipe (available in stores, or email Danny to have it added to your online order). Let the steak rest, then slice it into strips. Now, saute some sliced bell peppers and sweet onions in olive oil while boiling your favourite pasta. Penne works well, but any pasta will do! Once the pasta is cooked, drain and add it to the pan of sauteed peppers. Add the steak strips, season with salt and pepper as needed, toss and serve. This dish is great the next day, so make a bit extra and enjoy leftovers for lunch!
Pork chops and grilled vegetables
Fire up the grill for this easy dinner of pork chops and grilled vegetables. Asparagus, bell peppers, sweet potato slices and zucchini will all work great and complement your delicious, juicy VG Meats pork chops, but really, anything goes. The pork and vegetables alone make a delicious meal, but you can add cinnamon roasted apples (just toss sliced apples in cinnamon, lightly grill and serve), fresh whole grain dinner rolls or a great salad. It’s healthy made delicious — why eat any other way?
